The little city of Hudson in upstate New York is blessed with a large number of period properties for its size, and is known as a centre for Victorian-era restoration projects. Architect Michael Davis‘ work at Fish and Game was not exactly restoration, but more reconstruction – the fireplace in the middle of the dining room used for spit roasting was made using brick and stone salvaged from the original 19th Century blacksmith’s workshop.
Davis was the man to realise the vision of Fatty Crew chef Zakary Pelaccio, who is spearheading the restaurant along with his wife and chef Jori and friend Patrick, the owner of the charming old building. Boasting not one but two functional and attractive fireplaces, Fish and Game is a rustic gem which reflects its surroundings in the “New York Country” menu, harvesting ingredients from regional farmers as well as foraging the fields, forests and rivers of NY State.
