Not Guilty prides itself on whipping up nutritious, healthy food that won’t prick the conscience, clog the arteries or make the good workers of Zürich late for their 2pm meeting. In all honesty it’s usually the sort of place I’d pass by on the way to Big Bob’s Grease Palace, but Not Guilty hooked us in with an ethereally beautiful interior from “identity architects” Ippolito Fleitz, and we feel so much better for it.
This is the third outlet from the company founded by a former airline pilot and his lawyer friend. Virtue is everywhere at Not Guilty – even the staff are referred to as Angels – and Ippolito Fleitz kept purity and nature as its core principles. Pastel shades provide some understated colour offset against the predominant white. Oak flooring, tables and benches and hemp twine used for the wall graphics are examples of apt material choice, but the undoubted talking point here is the white lacquer “trees” that sprout from the floor and twist upwards to the canvas bands that span the ceiling.
