Bringing together the culinary concepts of Vena Steinkönig and Valentin Broer of Momo Ramen; Miguel Zaldívar of Miguélez; Patrick Rüther and Axel Ohm of Überquell; Burhan Schawich and Samet Kaplan of Underdocks; and Niels Berschneider of Yeahboy, Hamburg‘s 2,000 square metre food market Le Big TamTam has arrived at the city’s Hanseviertel shopping centre, and is a place to enjoy tasty fare, bite by bite, while immersing yourself in a variety of gastronomic worlds.
Following a 15 years hiatus, the large rotunda in Hanseviertel shines bright again thanks to a holistic lighting concept by Studio De Schutter. To set the stage for the reopening, the Berlin-based lighting design studio developed a flexible and adaptable lighting system to compliment the design of the space carried out by interior design studio and consultancy Studio Aisslinger.
A big challenge was not only the preservation of the Postmodernist gem, originally designed by gmp Architekten in 1980, but also the location of the restaurant in the basement of the Hanseviertel. Studio De Schutter subsequently created an atmosphere that invites diners to linger in winter and summer, day and night.
With the food stands obvious focal points, the architectural lighting consultancy opted for dimmable panels with tuneable white light to showcase the chefs at work. Reacting to and compensating for the lack of natural daylight in the basement, the ambiance is highly dependent on the time of day: during daytime the incident daylight from the glass dome is supplemented by the artificial lighting that illuminates the seating areas brightly and generously, whilst in the evening, the space is transformed into a warm, high-contrast atmosphere with accents on tables.
For ramen, autentic Mexican fare, a Neapolitan pizza and craft beer concept, fresh seafood specialties, and a sustainable chicken concept that relies entirely on regionality and seasonality, Hamburg’s Le Big TamTam is an urban food market with style and substance.
