Head over to New York’s West Village to check out Laliko, a new restaurant applying a contemporary twist to traditional Georgian cuisine. Founded by renowned restaurateur Gurami Oniani, this intimate 42-seat restaurant introduces a modern take on the rich culinary traditions of Georgia, highlighting its rise among the world’s most celebrated food cultures.
The menu pays homage to Georgia’s most beloved dishes, while infusing them with contemporary creativity. Khinkali dumplings — offered in beef and pork, lamb, cheese, and mushroom-truffle variations — are a must-try, as is the ‘Mother Khinkali,’ a giant dumpling filled with six smaller ones inside. Traditional Khachapuri (a warm, cheese-filled bread) makes an appearance alongside a thoughtfully curated beverage program featuring rare Georgian wines, chacha-based cocktails, and other classic regional drinks. With an open kitchen, guests are invited to witness the precision behind each plate.



Designed by Surgala Studio, the restaurant’s interiors balance modern sophistication with Georgian heritage, creating a space that is both elegant and inviting. A large communal table anchors the room, symbolising the Georgian supra; an age-old tradition of feasting and toasting.
Backgammon illustrations etched into the tables pay homage to nardi, Georgia’s beloved national game, while a striking green column adorned with handmade Tbilisi tiles celebrates the country’s rich craftsmanship. A mural by Georgian artists brings cultural storytelling into the space, featuring symbols like Svan towers, qvevri winemaking, and imagery from The Knight in the Panther’s Skin, an esteemed Georgian literary masterpiece. Beneath the communal table, a 200-year-old pardagi carpet ties the restaurant to its deep-rooted textile heritage, blending old-world charm with contemporary design.
With a mission to put Georgian cuisine firmly on the map, Oniani’s Laliko is an appetising proposition for those seeking a hearty slice of the new in New York City.
