The latest addition to the KAIYŌ brand, KAIYŌ Restaurant is located on the first floor of the Hyatt Place Hotel in SoMa, San Francisco — also home to KAIYŌ Rooftop on the 12th — and fuses the intricate cultures of Japan and Peru to create a unique Nikkei dining experience.

Designed by William Duff Architects, the space marries vibrant Peruvian textiles with the minimalist aesthetics of Japanese wood, diners greeted with the colour of Peru upon entering, and discovering Japanese influences as they traverse the dining room to arrive at the sushi counter.

A dynamic yet inviting dining atmosphere, highlights include a textured wood board treatment at the entrance which is inspired by traditional Japanese technique, Shou Sugi Ban, and sets the tone for the unique aesthetic journey ahead. A private dining room towards the rear presents a modern interpretation of a Japanese geisha room, with ambient lighting and red walls accented by mural art and laser-cut wood fans.

An exploration of the food and drink experience of the Japanese journey in Peru, the menu features regional ingredients and notable flavours which make up dishes including fresh ceviche, sashimi, grilled scallops and wagyu.
