El Huerto de Lucas in Madrid is a food market that takes its commitment to healthy ingredients very seriously indeed — so serious that even the building, from architectural studio More & Co, has been constructed with what we’re told are bio-healthy and toxin-free techniques and materials. I’m not sure I’d go as far as taking a bite out of the place, but it looks pretty darned wholesome all the same.

At more than 450 sqm there’s plenty of room for a bakery, a fruit and veg section, a butcher’s and a dry-goods shop, as well as a juice bar and coffee shop, space for regular pop-ups, and an organic canteen which uses El Huerto’s produce for eat-in and takeaway options.
